Dia de los Muertos 2024
Friday November 1 we drove to Puerto Vallarta to view the world’s tallest Catrina. On November 2 we drove to Sayulita for their Day of the Dead celebration.
Sugar free pan de muerto
Thanks to a fantastic website for diabetics, we have a recipe for sugar free pan de muerto! We cook-tested (and taste-tested) this recipe, and I am happy to share my experience with making it
Day Two in Guadalajara
This is all the famous touristy stuff you see when you go to Guadalajara, but I hadn’t seen it for at least 20 years, and Lurko had never been there.
Day One in Guadalajara
Today Lurko and I drove to Guadalajara with our two large dogs, who were excited about being on a road trip again. So were we. Other than our mini-vacation in La Cruz in June, we hadn’t done a road trip since April to see the eclipse in Playa Novillero.
Gardening in a Hot Climate
I admit, the vines are becoming a problem. Each day they inch closer to the house and threaten to cover my cactus and cucumber gardens. They’ve covered the cistern and septic doors, parts of the gravel path around the house, and are already starting to cover the 14-foot trailer.
How We Made Enough Money to Live Off-Grid In Mexico
Making money off-grid is already a challenge, and we also had to move two people, two dogs and all of our stuff to a foreign country.
Off-Grid Waste Management in Mexico
Living off-grid means that at some point, Lurko and I had to think about where our waste was going to go. Ever the idealist, I dreamed about living a zero-waste lifestyle. The basic idea of zero waste is to live in such a way as to create as little waste as possible. Sounds great, right?
How to Live Without a Refrigerator
Why would anyone live without a refrigerator? Because refrigerators need POWER, and you may not have enough of it. Maybe the power is out in your neighborhood. Maybe you’re just starting to build and you don’t have power yet. Maybe you just can’t afford a fridge right now.
Rainy season in Mexico
It is incredible how green everything is now. Here in Nayarit, “dry season” still has some green in the landscape. It doesn’t get completely brown, like Guadalajara does. But after it’s rained for a few weeks, the green in Nature’s color TV monitor gets turned up all the way.
Keto pizza
8/05/24 Lurko reached into his pizza-making experience from The Tomato to come up with this recipe. We eat it almost every day, usually for breakfast. It’s easy to make, you can change up the sauce and toppings so you never get bored, it’s 100% keto-friendly, it’s a great source of fiber, and it’s DELICIOUS.
