Lurko reached into his pizza-making experience from The Tomato to come up with this keto pizza recipe. We eat it almost every day, usually for breakfast. It’s easy to make, you can change up the sauce and toppings so you never get bored, it’s 100% keto-friendly, it’s a great source of fiber, and it’s DELICIOUS.

You can make this pizza for one person, or for many. Basic rule of thumb is: one egg per person. One egg may not sound like a lot, but chia seeds are very filling. Plus you’re loading up on whatever keto toppings you want. I promise you will be satisfied.
Ingredients
- eggs
- chia seeds
- sauce (tomato or other sugar-free pizza sauce)
- shredded cheese of your choice
- pizza toppings of your choice
Instructions
- By volume, add equal amounts of egg and chia seeds to a small mixing bowl.
- Mix vigorously with a fork until you have a uniform gray consistency.
- Immediately pour into a medium nonstick frying pan.
- Add sauce, cheese and topping to taste.
- Cover pan and cook on medium heat until cheese melts. The crust will be a little crispy around the edges.
Thanks to the nonstick pan, the pizza slides right onto the plate. Cut into slices and serve. I usually add avocado and alfalfa sprouts to my half of the pizza, and Lurko adds avocado and hot sauce to his half. The avocado adds lots of good fat. The sprouts are because I like them, and I’m always really proud that I can grow them on my own.
We use all kind of things for toppings – usually leftovers like hamburger or sausage. Recently, I’ve been on a Mexican chorizo kick. I don’t like it in eggs or breakfast tacos, but it turns out to make a great pizza topping! Here chorizo is super cheap, like 15 pesos for two meals’ worth. And I can find it in almost any mini-super in town. Amazon has it too.
